Eighteen years ago I got a recipe out of a magazine titled Virtue. Over the years I've changed a few things to make it my own. It is the most requested dish that I make so I thought I would share it with you.
FRENCH NUT YAMS
3 cups mashed yams or sweet potatoes
2 eggs
1/3 cup margarine
1/2 cup milk
1 cup sugar
1/2 teaspoon salt
1 tablespoon vanilla
TOPPING
2 cups brown sugar
2/3 cup flour
3/4 cup margarine
2 cups chopped pecans
In a large mixing bowl, combine yams or sweet potatoes, eggs, margarine, milk, sugar, salt and vanilla. Place in a well greased 9×9 casserole.
Combine topping ingredients in a saucepan. Cook on medium heat, stirring,until butter melts. Spread topping over yam or sweet potato mixture. Bake at 350 degrees for 30 minutes.
(I double for large groups)
